Chocolate Chip Cheesecake

Ingredients:
-10 Oreos crushed (I was a little lazy so I used a pre-made oreo crust)
-8oz fat free cream cheese, softened
-8oz light cream cheese, softened
-1 cup of sugar (see we are allowed to have the good stuff!)
-2 tbsp all purpose flour
-1 cup cottage cheese
-1 tsp Vanilla Extract
-6 large egg whites
-3/4 cup MINI choc. chips

Instructions:
-Preheat oven to 325 degrees
-lightly coat spring form pan with cooking spray and spread cookie crumbs lightly over bottom of pan
-Using an electric mixer mix together cream cheeses until well blended then add sugar and flower and mix again.
-in a food processor or blender puree cottage cheese until smooth. Add cottage cheese and vanilla extract to cream cheese mixture and mix again.
-Add egg whites and mix once more.
-Stir in 1/2 cup of choc. chips.
-Pour into spring form pan and sprinkle remaining chips on top.
-Bake until cheesecake puffs and center is almost set. About 60 minutes.
-Let cool completely and then run knife around edges to loosen and release pan sides. Cover and chill overnight. Cut into 12 slices. 1 slice =6 points
 

Scratch Chicken Nuggest

4Oz of Extra Lean Ground Chicken
2 Tbsp chopped Red Onion
1 Tsp parmesean cheese
Panko Crumbs for coating


Mix first three ingredients together. Coat "nugget" size amounts in Panko crumbs. Place  2 tbsp oil in Frying pan. Cook until no longer pink. Enjoy!

Ginger Pork and Broccoli (serves 1 but easily can be made in larger quantities)

In a medium skillet, saute 2 garlic cloves, minced, and 2 teaspoons minced ginger in 1 teaspoon sesame oil for 1 minute. Add 4 ounces cubed pork loin, fat removed, and cook 5 minutes until browned on all sides. Add 1 cup cooked brown rice to pork. Cook 1 cup chopped cauliflower and 1 cup chopped broccoli in boiling salted water for 1 minute; strain, reserving 1/3 cup water. Add vegetables and water to skillet with pork. Cook until water has evaporated, and then add 2 tablespoons soy sauce, 2 tablespoons sliced scallion, and a dash red chili flakes
